1. Chop the diesmillo into bite-sized pieces. 2. Slice the bell peppers and jalapeños. 3. Cook the chorizo in a large pan until brown, then set aside. 4. In the same pan, fry the bacon until crispy and set aside. 5. Add the minced garlic to the bacon fat and sauté briefly. 6. Add the diesmillo to the pan and cook until browned. 7. Add the sliced bell peppers and jalapeños to the meat, stirring occasionally. 8. Return the cooked chorizo and bacon to the pan. 9. Sprinkle the red fajita seasoning over the mixture. 10. Top with shredded queso Oaxaca and allow it to melt before serving.
