1. Pat the pork ribs dry with a paper towel. 2. Season both sides of the ribs generously with kosher salt and black pepper. 3. Preheat your smoker or ceramic grill to a low and slow temperature, around 250°F. 4. Place the seasoned ribs on the grill grate. 5. Smoke the ribs for several hours until they are tender and have developed a dark bark. 6. Remove the ribs from the smoker and let them rest for a few minutes. 7. Slice the ribs between the bones and serve with your favorite sides.
