Pollo en Chile Guajillo involves frying various chiles and garlic, blending them with spices and chicken stock, and cooking seasoned chicken thighs and drumsticks in the sauce. This flavorful dish is perfect served with your favorite sides.

1: In a pan at medium high heat, add oil and fry Chiles Puya, Chiles de Arbol, and garlic cloves. 2: Remove your chiles as soon as they change color and add to blender. 3: Fry onion and garlic, when done add to blender. 4: Fry tomatoes then add to blender. 5: Add Oregano, cumin, El Matador Chicken Seasoning, El Matador Guajillo Chile Adobo, toasted corn tortillas, chicken stock, El Matador Ancho Chile Adobo, and blend until smooth. 6: Season chicken thighs and drumsticks with El Matador Chicken Seasoning. 7: In a pan, fry the seasoned chicken until it gets a nice outer color and remove to drain oil. 8: Strain sauce in a pan with about 1 tbsp of oil, add bay leaves and salt if needed, then add your chicken. 9: When it comes to a boil let it simmer for about 20 minutes or until chicken reaches at least 175 degrees. 10: Serve with your favorite side and enjoy!
