First, slather the picnic shoulder with mustard, then apply your favorite barbecue rub. Smoke the pork at 225 Fahrenheit until the internal temperature reaches 170 Fahrenheit. Next, place the pork into a pan. Season the pork in the pan with more barbecue rub, add brown sugar, and a little bit of butter. Continue cooking until the internal temperature of the pork reaches 200 Fahrenheit. Once cooked, let the pork rest for two hours before chopping. The total cook time will be approximately eight hours.
