A simple and delicious Mexican chicken soup recipe (Caldo de Pollo), perfect for a rainy day and a small family. Made with chicken thighs and legs, vegetables, and aromatic spices.

In a pot add 1/2 onion, salt, pepper, whole garlic and 3 bay leaves with 5 chicken thighs and 5 legs. Boil until fully cooked, maybe 30-40 minutes. Remove everything (chicken and aromatics). Add 6 baby potatoes, 2 carrots, 2 celery to the broth. When potatoes are soft, add back shredded chicken thighs and whole legs. Add oregano, Mexican squash and cilantro. Bring to a boil. Add salt if needed.
