1: In a medium size pot, bring 6 cups of water to a boil. 2: Add cubed pork shoulder, pork ribs, onion, garlic head, and salt to taste. 3: Skim any residue that floats to the top and let it cook for an hour. 4: In a small pot, boil Chile Guajillos, Chile Anchos, and Chile de Arbol for 7-10 minutes after removing their seeds. 5: In a blender, combine the boiled chiles with garlic cloves, chicken bouillon, oregano, cumin, and 2 cups of water, and blend well. 6: After an hour of cooking the meat, pour in the hominy and let it cook for 30 minutes. 7: Strain the blended sauce and let it cook for 30 more minutes. 8: The pozole should be done in about 2 hours or when the pork is fork tender. 9: Garnish with cabbage, radish, onion, lime, and your favorite red sauce before serving.
