For the Beef Tongue: Slow cook the lengua (beef tongue) with ½ large onion, 4 bay leaves, 2 small heads of garlic, and about 2 tbsp of salt until the skin peels right off and the meat is tender and juicy. This process should take approximately 2.5 hours. For the Green Salsa: Combine 12 tomatillos, 5 garlic cloves, ½ onion, 16 serrano peppers, 1 tbsp chicken bouillon, and 1 cup of water in a blender. Blend until smooth and spicy to your liking. Serve with the cooked beef tongue in tacos.
