1. Preheat your grill to medium-high heat. 2. Season and grill the skirt steak, chicken breast, chorizo, shrimp, nopales, spring onions, and jalapeños until fully cooked and charred. 3. While grilling, heat the molcajete in an oven or on the grill until very hot. 4. Prepare or heat your salsa. 5. Carefully remove the hot molcajete and pour the warm salsa into the base. 6. Arrange the grilled meats (steak, chicken, chorizo) around the inside walls of the molcajete. 7. Add the grilled nopales, spring onions, and jalapeños. 8. Top the center with the grilled shrimp. 9. Garnish with slices of panela cheese. 10. Serve immediately while sizzling.
