Bring ½ gallon of water to a boil and add 1 white onion (split in half), 2 lemons (wedged), 1 pack crawfish seasoning, 2 tbsp salt, and 3 tbsp Matador Seafood Seasoning. Add 6 corn on the cob (cut bite-size) and boil for 15 minutes. Remove corn. Add 3 lbs baby potatoes and boil until tender, then remove. For the Butter Sauce: Melt 6 sticks unsalted butter + 4 sticks salted butter on low heat. Add 3 heads minced garlic and cook for 3–4 minutes. Season with 2 tbsp lemon pepper, 2 tbsp Old Bay, 2 tbsp cayenne, 2 tbsp El Matador Seafood Seasoning, 2 tbsp El Matador Guajillo Chile Adobo, and 1 cup reserved broth. Bring the sauce to a boil, then add 2 lbs pork sausage (bite-size) and cook for 5 minutes. Add 5 lbs shrimp + juice of 2 lemons. Cook until the shrimp turns pink. In a large pan, combine potatoes, corn, shrimp & sausage. Pour ALL that butter sauce on top and enjoy!
