1. Prepare your ribs: season one slab with salt and pepper and the other with a BBQ rub. 2. Set up your ceramic grill (e.g., Primo Ceramic Grills) for smoking at 225°F using lump charcoal. 3. Smoke the ribs for the first 2 hours, spritzing them with apple juice every 30-45 minutes. 4. After 2 hours, wrap the ribs in foil along with some apple juice and Parkay. Continue to smoke for 1 hour. 5. Remove the ribs from the foil wrap and smoke for an additional hour. 6. During the last 15 minutes of smoking, apply your preferred BBQ sauce to the ribs.
