1. Season the beef tongue generously with salt. 2. Smoke at 275°F until internal temp hits 160°F. 3. Place in a pan with beef broth, cover with foil, and return to the smoker. 4. Continue smoking until internal temp reaches 195°F - the skin should peel off easily (if not, cook a bit longer). 5. Slice, chop, and season with a little more salt to taste. 6. Serve it up on warm tortillas.
