This mole recipe combines a variety of chiles, nuts, spices, and chocolate to create a rich sauce for chicken, served with red rice and garnished with white sesame.

1: In a skillet at medium high heat add oil and lightly fry your chiles, bread, tortillas, bananas, onion, chocolate, and garlic. 2: In a comal toast your almonds, thyme, cloves, white sesame, black pepper ground, peanuts, and cinnamon. 3: In a blender add your mole sauce and paste along with all your fried and toasted ingredients. 4: Add water and blend until smooth then strain your sauce. 5: In a pot melt lard and cook your mole sauce. 6: Add chicken and cover with more sauce. 7: Simmer until chicken is done stirring occasionally. 8: Plate it with red rice and garnish with white sesame.
