Tri tip smoked to a perfect medium rare, seasoned simply with salt and pepper, and rested before slicing.

Season the tri tip generously with salt and pepper. Place the seasoned tri tip in a smoker preheated to 225°F. Smoke until the internal temperature of the tri tip reaches 125°F (for medium rare). Once the desired internal temperature is achieved, remove the tri tip from the smoker and let it rest for 15 minutes before slicing against the grain and serving.
