1. Grill the skirt steak on a hot grill until cooked to your liking. 2. On the same grill, roast the green chilies until the skin is blistered and charred. 3. Remove the skin and seeds from the roasted chilies and slice them open. 4. Warm a flour tortilla, then place a layer of the roasted chili on top. 5. Sprinkle a generous amount of shredded cheese over the chili. 6. Slice the grilled steak into strips and arrange them over the cheese. 7. Place the assembled taco back on the grill for a minute to melt the cheese. 8. Remove from the grill and top with red salsa before serving.
