Season the brisket with @firesmoke_bbq brisket rub. Smoke the brisket at 200 degrees Fahrenheit for 7 hours. Once the internal temperature of the brisket reaches 160 degrees Fahrenheit, wrap it in butcher paper. Continue smoking until the internal temperature reaches 195 degrees Fahrenheit and the brisket is probe tender. Rest the brisket for 2 hours before slicing.
