Our lazy/quick way to do Albondigas ๐ We have full time jobs and we cook When we get home ๐ Albondigas have rice and mint. Used 2lbs ground beef, the little pack of mint they sell and 1/2 cup of rice. Mix and made the meat balls. Placed in a pot of water seasoned with 2 tbs of knorr beef bouillon. Cooked for 20 minutes removed the foam that comes up. Then added the 2 big potatoes, 2 big carrots and 3 tbs of chipotle sauce. Cooked for another 15 minutes. 1. In a bowl, mix the 2 lbs ground beef with the little pack of mint and 1/2 cup of rice. Form the mixture into meatballs. 2. In a pot, bring water to a boil and season it with 2 tablespoons of Knorr beef bouillon. Add the meatballs to the seasoned water. 3. Cook for 20 minutes, removing any foam that comes to the surface. 4. After 20 minutes, add the 2 big potatoes, 2 big carrots, and 3 tablespoons of chipotle sauce to the pot. Continue to cook for another 15 minutes. 5. Finally, add the 2 big zucchini and 1/4 bunch of cilantro. Cook for an additional 5 minutes. Serve and enjoy!
