What you need

bunch cilantro

lb ground beef

tsp oregano

tbsp chicken bouillon

Instructions
1. Mix ground beef, rice, chopped mint, cumin, oregano, salt, and ground pepper together and form meatballs. 2. Blend roasted tomatoes, chipotles in adobo, garlic cloves, chicken bouillon, and 1.5 cups of water until smooth to make the sauce. 3. Bring 6 cups of water to a boil and add meatballs. Boil for 10 minutes. 4. Add corn cobs cut into bite-size pieces and boil for 7 minutes. 5. Add chopped celery stalks, cubed medium potatoes, and chopped carrots. Boil for another 7 minutes. 6. Add chopped zucchinis and pour in the sauce. 7. Taste for salt and boil for another 3–5 minutes. 8. Garnish with chopped onion and cilantro. Serve with tortillas.
