Instructions
1. Place the beef tongue in a large pot with water, a piece of onion, garlic, and bay leaves. 2. Cover the pot and simmer for about 2.5 to 3 hours until the meat is tender. 3. To make the salsa, combine tomatillos, serrano peppers, onion, garlic, salt, and chicken bouillon powder in a blender. 4. Blend the salsa ingredients until you reach the desired consistency. 5. Pour the salsa into a bowl and mix in chopped green onions. 6. Once the tongue is cooked, remove it from the pot and let it cool down enough to handle. 7. Peel the outer layer of skin off the tongue. 8. Chop the tender tongue meat into small, bite-sized pieces. 9. Warm the corn tortillas on a skillet or comal. 10. Assemble the tacos by placing a generous amount of chopped tongue on each tortilla. 11. Garnish with diced onion and fresh cilantro. 12. Top with the homemade tomatillo salsa. 13. Serve with lime wedges, sliced radishes, and cucumber on the side.
