What you need

cup salsa

cup mexican crema
cup vegetable oil

pinch salt

pinch black pepper

cup queso fresco

can sweet corn

can refried beans

cup shredded cheese
Instructions
1. In a pan, sauté diced onion, minced garlic, and diced jalapeño until fragrant. 2. Season with salt and pepper. 3. Add diced tomatoes and corn, and cook for a few minutes. 4. Stir in diced zucchini and cook until tender. 5. Top the vegetable mixture with shredded cheese, cover the pan, and allow the cheese to melt. 6. In a separate pan, warm or fry the sopes in oil until slightly crispy. 7. Spread a layer of refried beans on each sope. 8. Top the beans with the cheesy calabacitas mixture. 9. Garnish with crumbled queso fresco, salsa, and crema before serving.
