Instructions
1. In a large pot, bring water to a boil. Add ½ onion, 1 garlic head, 2 lbs short ribs, 2 lbs beef stew meat, and salt. 2. Once the meat is fork-tender, add corn and potatoes, and let them cook. 3. Add Mexican squash and carrots, let it simmer a bit longer. 4. Add cabbage at the end and finish with cilantro. 5. Serve in a bowl, top with fresh onion, hot sauce, lime juice, and rice. Serve with buttered tortillas. 6. Warm up tortillas, add butter, and enjoy.
