Instructions
1. Dice the potatoes and tomatoes. Finely chop the onion and jalapeño. 2. In a large skillet, heat oil over medium-high heat. Add the diced potatoes and fry until golden brown and tender. 3. Add the chopped onion and jalapeño to the skillet and sauté for a few minutes until softened. 4. Stir in the diced tomatoes and cook for another minute. 5. In a separate skillet, cook the chorizo over medium heat until fully cooked, breaking it apart with a spoon. 6. Add the cooked potato and vegetable mixture to the skillet with the chorizo and stir to combine. 7. Serve the chorizo con papas hot, accompanied by refried beans, slices of queso fresco, and warm flour tortillas.
