What you need

tbsp Crema Mexicana

onion

can black beans

slice red onion

tsp garlic
cup vegetable oil

tbsp butter

tbsp chipotle in adobo
Instructions
1. In a blender, combine black beans, a piece of onion, and chipotle peppers. Blend until the mixture is smooth. 2. Melt butter in a large skillet over medium heat. Add minced garlic and cook until fragrant. 3. Pour the blended bean sauce into the skillet with the garlic butter. Stir and cook until it thickens. 4. In a separate skillet, heat oil and lightly fry corn tortillas one by one until they are soft and pliable. 5. Dip each fried tortilla into the warm bean sauce, making sure it is fully coated. 6. Place a coated tortilla on a plate, sprinkle with queso fresco, and fold it in half. 7. Arrange three or four filled enfrijoladas on a plate. 8. Drizzle Mexican crema over the enfrijoladas, then sprinkle with more queso fresco and sliced red onion. 9. In a clean skillet, fry two eggs to your preference (e.g., sunny-side up). 10. Place the fried eggs on top of the enfrijoladas and season with a pinch of black pepper before serving.
