Instructions
1. Roast the jalapeños and tomatoes on a comal or under a broiler until the skins are blackened and blistered. 2. In a molcajete, add the garlic cloves and grind them into a paste using the tejolote (pestle). 3. Add the peppercorns and a pinch of salt, and continue grinding to combine. 4. Add the roasted jalapeños to the molcajete and grind them to a coarse texture. 5. Add the roasted tomatoes one at a time and mash them into the mixture until you reach your desired consistency. 6. Stir everything together, taste, and add more salt if necessary.
