Pozole Rojo with Country Style Ribs

What you need

fl oz hot sauce

head cabbage
lime

bunch radish

tbsp ground cumin

clove garlic clove

ancho chile

can hominy

cup water

pinch salt

guajillo chile

dried arbol chiles

lb pork ribs
Instructions
In a pot boil 3/4 gallon of water with onion, garlic and salt. Add 6 lbs of country style ribs cut into pieces. When pork residue comes up remove for clear water. For the sauce you will need 10 chile guajillos, 2 chile anchos, 4 chile de árbol. Remove the seeds and boil for less than 5 minutes. Remove Chiles and add to the blender with 3 garlic cloves, salt to taste, 1 tbs of cumin and use the 2 cups of the same water you boiled your Chiles with. Blend until smooth and strain your sauce. Add 2 small cans of hominy your sauce and boil for 15 minutes. Garnish with cabbage, radishes, onion, lime and add your favorite hot sauce. Enjoy!View original recipe
