fl oz bbq sauce
Instructions
Start with 1 fully cooked spiral or whole ham (8–12 lbs). Rub it down with mustard, then hit it with your favorite BBQ rub. Set your smoker to 275°F. Place ham cut-side down if it’s spiral. Into the smoker it goes! When the internal temperature climbs to 120°F, crown it with pineapple slices and cherries (toothpicks do the job). Keep smoking until it hits 135°F. Brush on a thick layer of your BBQ glaze. Continue smoking to 140–145°F. Re-glaze every 10 minutes for that shiny, sticky, irresistible finish. Rest 10–15 minutes. Slice it up and serve with extra BBQ sauce on the side. If you prefer it sweeter, add more honey to your sauce. For some heat, a pinch of cayenne or chipotle does wonders. Note that spiral hams cook faster, so keep an eye on that temperature!View original recipe
