Instructions
1. Pat dry and trim any loose fat from the rack of pork. 2. Lightly salt the rack on all sides. 3. Mix the butter and apply it all over the pork. 4. Preheat pellet smoker to 275°F or use an oven. 5. Place the rack of pork bone-side down in the smoker. 6. Smoke until the internal temperature reaches 140°F, about 2.5 to 3.5 hours depending on the size of the rack. 7. Optional: spritz with apple juice every hour for extra moisture. 8. Remove the rack when it reaches 140°F and tent with foil. 9. Let the rack rest for 15–20 minutes to reach a juicy internal temperature of 145°F. 10. Slice the pork between the bones into thick chops and serve with your favorite sides.
