Instructions
1. Spatchcock the turkey and season generously with your favorite poultry seasoning. 2. Smoke the turkey at 325°F until the breast reaches 165°F and the leg/thigh reaches 175°F. 3. Lightly fry chiles, bread, tortillas, bananas, onion, chocolate, and garlic in oil. 4. Toast almonds, thyme, cloves, sesame, black pepper, peanuts, and cinnamon on a comal. 5. Blend everything with mole sauce, mole paste, and water until smooth, then strain. 6. Melt lard and cook the mole sauce for 30–45 minutes until rich and glossy.
