Instructions
1: Clean tripas well, remove fat & rinse under warm water. 2: In a big pot, simmer with onion, garlic, bay leaves, peppercorns, oregano, salt & bouillon. 3: When fork-tender, drain & get ready to crisp! 4: Fry tripas in a cast iron with green onions until golden & crunchy. 5: Serve in tortillas with cilantro, diced onion, radishes & a squeeze of lime.View original recipe
