Smoked Steak and Cheese Sandwich

A hearty and flavorful sandwich featuring smoked and seared tri-tip steak, sautéed peppers and onions, and melted cheese on grilled bread with a spicy mayo sauce.

What you need
tri-tip steak

bell pepper

slice bread

tbsp sriracha hot sauce

pinch black pepper

onion
pinch salt
tbsp mayonnaise

cup shredded cheese

tbsp steak seasoning
Instructions
1. Apply your favorite steak seasoning liberally to the tri-tip steak. 2. Smoke the steak at 300°F until the internal temperature reaches 120°F. 3. Sear the exterior of the steak with a torch or directly over hot coals. 4. Let the steak rest, then slice it thinly. 5. Heat olive oil in a skillet over medium-high heat. 6. Add sliced bell peppers and onions to the skillet, seasoning with salt and pepper. 7. Cook the vegetables until they are soft and slightly caramelized. 8. Spread mayonnaise on one side of each slice of bread. 9. Place the bread slices, mayonnaise-side down, on a hot griddle to toast. 10. Flip one slice of bread and drizzle with a sriracha-mayo sauce. 11. Layer the sliced steak, cooked peppers and onions, and shredded cheese on the bread. 12. Cover with a dome lid to allow the cheese to melt completely. 13. Place the second slice of toasted bread on top to complete the sandwich. 14. Slice the sandwich in half and serve immediately.
