Armadillo Eggs (Smoker Recipe)

Smoked jalapeños stuffed with a creamy cheese mixture, wrapped in ground pork and bacon, then glazed with BBQ sauce.

What you need

oz cream cheese

bacon

lb ground pork

oz shredded cheese

jalapeno
oz bbq seasoning
Instructions
1. Take your jalapeños and remove the seeds using an apple corer. 2. In a bowl, mix cream cheese and your favorite shredded cheese until it’s creamy and combined. 3. Fill each jalapeño with the cheese mixture. 4. Wrap the stuffed jalapeños with ground pork, making sure it’s fully sealed like a little egg. 5. Season generously with your favorite BBQ rub. 6. Wrap each pork-covered jalapeño with bacon, overlapping the bacon so none of that goodness escapes. 7. Place in your smoker at 325°F. 8. Smoke for 1 hour 20 minutes. 9. Brush on your favorite BBQ sauce. 10. Let it smoke for another 15 minutes to set the glaze. 11. Remove, let cool 5 minutes. 12. Bite in, enjoy the cheese explosion!View original recipe
