Instructions
1: In a large bowl, squeeze the juice of 5 oranges and 5 limes. 2: Add 1 tablespoon of cumin, pepper, chili powder, oregano, and 4 tablespoons of salt, along with a splash of cooking oil to your marinade. 3: Add 1 sliced white onion, 1 bunch of chopped cilantro, and 3 minced garlic cloves to the marinade. 4: Place in a Ziploc bag and let it marinate for 4 hours. 5: Grill the meat to your desired doneness. 6: Roast the jalapeños and tomatoes until soft for the salsa. 7: In your molcajete, grind the garlic cloves, salt, and pepper until almost paste-like. 8: Add tomatoes and jalapeños one by one, grinding slowly until the desired consistency is reached. 9: For beans, heat lard in a cast iron skillet. 10: Add beans and gently smash with a potato masher as they cook, stirring and mashing until the texture is to your liking.View original recipe
