Instructions
1. Add beef cheeks to a large pot with onion, garlic, bay leaves, black peppercorns, Mexican oregano, cumin, beef bouillon, and salt. 2. Bring to a boil, then simmer covered for 3-4 hours until beef is fork-tender. 3. For the salsa, toast guajillo chiles and chiles de árbol, soak in beef broth for 10 minutes. 4. Char the Roma tomatoes. 5. Blend the soaked chiles, charred tomatoes, 1/4 onion, garlic, and salt until smooth to make the salsa. 6. Shred the beef cheeks. 7. Warm the corn tortillas. 8. Load the shredded beef onto the tortillas. 9. Garnish with cilantro, diced onion, lime wedges, and the prepared salsa.
