Instructions
1. In a large bowl, combine diced tomatoes, red onion, cucumber, jalapeños, and chopped cilantro to make the pico de gallo. 2. Pour lime juice over the vegetable mixture and season with salt and pepper. 3. Stir the pico de gallo well to combine all ingredients and set aside. 4. Cook the beef on a hot griddle or pan until browned and crispy. 5. Remove the cooked beef from the griddle and chop it into small, bite-sized pieces. 6. Warm the corn tortillas on a hot comal or skillet on both sides. 7. To assemble, place a portion of the chopped beef onto a warm tortilla. 8.
