Instructions
1. Season the beef ribs generously on both sides with salt and pepper. 2. Prepare the smoker with lump charcoal and preheat it. 3. Place the seasoned ribs on the smoker grate, close the lid, and cook low and slow until tender. 4. In a mixing bowl, add the cornbread mix. 5. Pour in milk and add an egg to the cornbread mix. 6. Add chopped jalapeños to the mixture. 7. Whisk all the ingredients together until you have a smooth batter. 8. Pour the batter into a muffin tin lined with paper cups. 9. Place the muffin tin on the grill to bake. 10. Bake until the cornbread muffins are golden brown and cooked through. 11. Remove the ribs and cornbread muffins from the grill. 12.
