Pavo Enchilado is a spicy, flavorful turkey dish made by marinating the bird in a creamy blend of chiles and seasonings, injecting it with butter, and roasting to perfection. This recipe is perfect for a flavorful dinner or festive occasion.

What you need

poultry seasoning
tbsp dried oregano

tbsp chicken bouillon

onion

tbsp ground cumin

guajillo chile

cup chicken stock

oz achiote

clove garlic clove

unsalted butter

Instructions
1. Boil the guajillos, puya, árbol, and morita chiles until soft. 2. Blend with garlic, onion, cloves, achiote, oregano, cumin, bouillon and chicken stock until smooth. Set aside. 3. Inject your turkey with injectable butter. 4. Soften butter and rub it all over the turkey. 5. Season generously with poultry seasoning. 6. Drench the turkey in your enchilado sauce. 7. Bake at 350°F until internal temp is 165°F in the breast and 175°F in the leg. 8. Rest 15–20 minutes so those juices settle. 9. Slice, serve with your favorite sides and enjoy.
