Who else loves mole? Here’s how we did ours. We cook by look and feel. It’s hard to give exact measurements for this. We did have sauce leftover which we saved for enchiladas.

What you need

chicken

bunch thyme

tsp cinnamon

oz lard

chocolate

onion
fl oz oil

garlic

fl oz water

almond

peanut

clove clove

ancho chile

banana

tortilla

bunch white sesame seeds
arbol chile

tsp ground black pepper

Instructions
In a skillet at medium high heat add oil and lightly fry your chiles, bread, tortillas, bananas, onion, chocolate, and garlic. In a comal toast your almonds, thyme, cloves, white sesame, black pepper ground, peanuts, and cinnamon. In a blender add your mole sauce and paste along with all your fried and toasted ingredients. Add water and blend until smooth then strain your sauce. In a pot melt lard and cook your mole sauce. Add chicken and cover with more sauce. Simmer until chicken is done stirring occasionally. Plate it with red rice and garnish with white sesame. Enjoy!View original recipe
