Instructions
1. Grill tomatoes and jalapeño peppers directly on hot coals until well-charred on all sides. 2. Season the skirt steak, cactus paddles, and sliced onions with seasoning. Grill over hot coals until cooked to your preference. 3. In a molcajete, add garlic cloves and a pinch of salt. Grind them together into a fine paste. 4. Add the charred tomatoes to the molcajete and crush them into the garlic paste. 5. Add the charred jalapeños to the mixture and continue grinding until a chunky salsa is formed. 6. Let the grilled steak rest for a few minutes before slicing it into strips. 7. Warm the corn tortillas on a hot comal or skillet. 8. Assemble the tacos by placing sliced steak on a warm tortilla, topping it with grilled onions, and finishing with a spoonful of the fresh molcajete salsa.
