Instructions
Season your pork shoulder with your favorite BBQ rub. Applying mustard is optional before seasoning. Set up your smoker to maintain a temperature of 275°F and smoke the pork shoulder using apple wood. Do not wrap the pork at any point during the cook. The pork is done once it reaches an internal temperature of 200°F or when it is probe tender (an 8lb pork shoulder typically takes about 7 hours, but cooking time will vary).
